Ingredients:
- 1 medium onion, chopped
- 4 cloves fresh garlic, crushed
- 2 tablespoons extra virgin olive oil
- ½ lb fresh whitefish (haddock, tilapia, cod, etc.)
- ½ lb bay scallops
- ½ lb raw shrimp, peeled
- ½ lb fresh crab meat
- 1 teaspoon lemon juice
- 8 ripe Italian tomatoes (plum or Roma tomatoes)
- 2/3 cup white wine (if desired)
- fresh Italian herbs, chopped (1 teaspoon each: rosemary, thyme, Italian parsley, basil)
- 1 lb Dreamfields® Low-Carb Linguini Pasta, cooked according to directions
Preparation:
- Heat skillet over medium heat. Sauté the onions and garlic in the olive oil until just soft, but not brown.
- Add the seafood and sauté, stirring gently until shrimp are white.
- Transfer seafood mixture to a bowl and keep warm.
- Return skillet to heat and add chopped tomatoes, wine, lemon juice and bring to a soft simmer for 6-8 minutes.
- Add freshly chopped herbs and seafood mixture and simmer an additional 2 minutes.
- Serve over prepared Dreamfields® Low-Carb Linguini.
Suggested side: Mixed leafy green salad with low-carb dressing.
