The quicker and simpler the recipe, the more I like it! You can use shortcuts without skimping on flavor and nutrition.

 

Serves 6

Ingredients

  • 2 pounds fresh Icelandic cod
  • 2 (16 oz) packages frozen California Blend vegetables (broccoli, cauliflower, carrot mixture)
  • 1 cup fresh snow peas
  • 4 green onions, julienned
  • 1 tablespoons minced fresh ginger root
  • 2 tablespoons rice wine or rice vinegar (not sweet)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Splenda®

 

 

Preparation

To cook fish:

Place fish in microwave safe dish. Put ½ of the julienned green onion on top and half the ginger. Drizzle with cooking wine and cover. Microwave on high for 3 ½ - 4 minutes. Set aside.

To cook vegetables:

Heat a wok or large non-stick skillet over high heat. Once hot, add oil and quickly spread oil around wok or skillet to heat—but not smoking!

All at once, add vegetables and remaining ginger. Stir continuously for 1 minute.

Remove from heat and place on platter right away to stop cooking process.

To serve:

Place cod on top of vegetables and garnish with remaining ½ julienned green onion. Serve immediately.
